Yau's Intense Black Bean Sauce

When it comes to giving our flavours depth, we don't mess about! Our Black Bean Sauce is peppery and full of the flavour of fermented beans and ginger. 

Stir-Frying

For a quick and easy stir-fry, cook your preferred meat (seasoned with just a little salt) and vegetables in a wok or deep pan and when the meat is nearly cooked through just add the sauce (1 jar is enough for 4 people) and gently reheat. There's no need for any further seasoning and as soon as the sauce is hot enough it's ready to serve.

Classic combinations include beef and mushrooms and the sauce works best when used with coarse textured meats such as beef, lamb or even duck. Mushrooms are great for complementing the earthy texture and flavour and soak up the sauce to deliver mouthfuls of intense flavour.

Baking

Yau's Black Bean works fabulously with fish too, particularly salmon.

Place a fillet of salmon on top of a couple of slices of fresh ginger on foil. Add a couple of tablespoons of sauce per person and a dash of soy sauce if you have some. Fold the foil over to create a sealed 'bag' and pop into the oven on a medium heat for around 25 minutes. This will give the sauce enough time to penetrate the fish whilst slowly cooking without drying out.
